Kelley's is Owned and operated by Brothers & Chefs Mark & Chad Henry. More importantly it is inspired by their mother Kelley.
Kelley was a career cook. She began cooking as a child with her mother and father, and that love blossomed as she entered the United States Navy as a Mess Specialist (Cook). Serving on various ships in the fleet, and most notably cooking at mess halls in Guantanamo Bay Cuba, United States Naval Base. Coincidentally Chef Mark was born here! After her time in the navy was complete Kelley and Husband Mark as well as son Mark moved to Endicott Ny, where she continued to develop her love of cuisine, and experimented with many styles of food. She was always cooking something, and teaching the boys how to make her favorites as well. Spiedies are a regional dish local to the town of Binghamton and surrounding areas, where the family grew up together (The boys grew up in their father's childhood home), and quickly became a favorite of theirs. Around age 10 Chef Mark and Kelley began working on their own marinade recipe, and worked on it for close to 10 years before they were satisfied with the result. In 2015 Kelley lost her 9 year struggle with cancer and passed away. This was the catalyst for the relationship that Brothers Mark and Chad would eventually grow into.
Chef Mark graduated from Maine Endwell High School In January of 2003, and promptly left for United States Army Basic Training. Mark was medically retired after 3 tours oversees in March of 2009. It was at this time that Mark decided to return to the Food and Beverage industry in order to provide for his growing family. Entering culinary school and fully investing in the industry became less of a decision and more of a calling for him at this point. Food provided a sense of relief and control for Mark. Working his way through kitchens across the greater Front Range region of Colorado. Chef Mark has held positions in kitchens such as The Black Bear Restaurant in Green Mountain Falls, The Club at Flying Horse, The Blue Star, Meatlocker at Ivywild, Ranch Foods Direct, and Brother Luck Street Eats.
Through his travels and career Chef Mark has been able to rub elbows and train, and cook along some of the greatest chefs in the United States. Chef Mark began competing on the Food Network and various other circuits, and you may recognize him from his appearances on "Cook's Vs. Con's", "Chopped", "Beat Bobby Flay" and various other competition shows. As well as various other local awards, and competitions. Chef Mark now mostly makes appearances as a judge or a member of the cast on other shows, and events.
Chef Chad was born in 1993 into a family that was already completely engulfed in the culinary arts and very quickly fell in love with it as well. Also Graduating from Maine Endwell High School, Chef Chad made the eventual move to Colorado to be with Chef Mark and Family and get a fresh start. Chef Chad immediately took a position in the kitchen at Rooster's House of Ramen his brother's restuarant in the same space that Kelley's resides in. The two have been inseparable ever since, and enjoy writing menu's and cooking food together almost more than anything else.
Chef Chad worked his way through their childhood hometown cooking at Our Country Hearts, Traditions at the Glen Hotel & Spa, and Galaxy Brewing Company. After relocating to Colorado Springs chad has held positions at Slice 420, Colorado Craft, and served as the Chef De Cuisine at Rooster's House of Ramen.
The Brother's and their family could not be more excited to prepare the food of their youth, and family gatherings and share it with all of you, while honoring our mother that started this whole journey with us!
